Ground beef is cooked into tiny, tender crumbles and lightly glazed with tallow, a splash of bone broth, and butter for a glossy finish. Keeping the mixture loose is the key. Let the beef sear first, then use broth to help separate the crumbles without drying them out. Salt is all you need, but optional anchovy paste adds a big savory boost while staying animal-based. Dairy is optional—go cheese-free and swap in extra tallow if you prefer.

- 1 lb (450 g) 80/20 ground beef
- 1 tbsp beef tallow
- 1 tsp fine salt, or to taste
- 1/4 cup unsalted beef bone broth (optional, for juicier loose meat)
- 1 tbsp unsalted butter (optional, for glossy finish)
- 2 oz sliced or shredded cheddar or American cheese (optional)
- 1 tsp anchovy paste (optional, savory booster)
- Pork rinds for scooping (optional)
Instructions
- Preheat a large skillet over medium-high heat for 2 to 3 minutes.
- Add beef tallow. When shimmering, add the ground beef in one piece and let it sear undisturbed for 60 to 90 seconds.
- Season with salt, flip, then begin chopping and crumbling the beef into very small bits with a spatula. Add the bone broth (if using) to help separate the meat into loose, tender crumbles.
- Cook, stirring often, until the beef is just cooked through and juicy but not soupy, about 4 to 6 minutes. Stir in anchovy paste now if using and let it dissolve.
- Reduce heat to low. Add butter and toss to glaze. Taste and adjust salt.
- If using cheese, either stir it through to melt or place slices on top, cover the pan for 20 to 30 seconds to soften.
