Ground Beef Breakfast Scramble - For the Carnivore Diet

A fast, protein-packed carnivore scramble of ground beef and eggs cooked in tallow, finished simply with salt and optional cheese.

This Ground Beef Breakfast Scramble is a simple carnivore staple: juicy 80/20 ground beef, rich eggs, and clean animal fat, cooked hot and fast for a hearty, zero-carb start to your day. It’s ready in about 15 minutes and uses just a handful of ingredients you likely already have.

Use beef tallow for the cleanest carnivore flavor, or butter/ghee if you prefer. An 80/20 grind keeps the scramble moist without needing much added fat. Six eggs balance one pound of beef nicely; add a pinch of fine salt and, if you include dairy, a little hard cheese for a salty, melty finish.

For a softer, custardy texture, scramble the eggs gently and fold them into the beef off the heat. For crispy bits, brown the beef well before adding the eggs. If your pan renders more fat than you like, spoon off a little; if it looks dry, add another teaspoon of tallow.

This reheats well for meal prep. Cool quickly, store in an airtight container up to 3 days, and rewarm in a skillet over medium heat with a touch of fat. Serve as-is, or top with a pat of butter for extra richness.

  1. Preheat a large skillet over medium-high heat. Add tallow and let it melt and shimmer.
  2. Add the ground beef and sprinkle with half the salt. Cook, breaking it up, until browned with some crispy edges and most liquid cooks off, 5–7 minutes.
  3. Reduce heat to medium. If there’s excess fat you don’t want, spoon off a little; if the pan looks dry, add another teaspoon of tallow.
  4. Beat the eggs lightly in a bowl (just to break the yolks), then pour over the beef. Let sit 10–15 seconds to set around the edges.
  5. Scramble gently, folding eggs through the beef until the eggs are just set and still glossy, 1–2 minutes. Season with remaining salt.
  6. Optional: Fold in cheese off heat until melted. Taste and adjust salt, then serve immediately.
