Carnivore Pizza (Meat Crust) - For the Carnivore Diet
This carnivore pizza uses a seasoned meat crust so you get the full pizza experience without any grains or vegetables. The crust is a blend of ground beef, egg, and hard cheese for structure, baked until set, then finished with a generous layer of melted mozzarella and salty cured meats.
Par-baking the crust is the key to a sturdy slice. Drain or blot the rendered fat after the first bake, then add toppings and return it to the oven until bubbly. A quick broil adds a classic pizzeria finish without introducing non-carnivore ingredients.
Use 80/20 ground beef for the best texture and a crisp edge. Parmesan or crushed pork rinds act as a binder; you can omit them for strict simplicity, but the crust will be softer. Let the pizza rest before slicing so it holds together. Leftovers reheat well in a skillet or air fryer and keep up to 3 days in the fridge.
Ingredients
- 1 lb (450 g) ground beef, 80/20
- 1 large egg
- 1/4 cup (25 g) finely grated Parmesan or pork rind crumbs (binder, optional)
- 1 tsp fine salt
- 1 cup (110–120 g) shredded low-moisture mozzarella
- 2 oz (55 g) pepperoni slices
- 2 slices bacon, cooked and crumbled
- 1 tbsp finely grated Parmesan, for finishing
- Beef tallow or ghee, for the pan (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper; lightly grease with tallow or ghee if desired.
- Make the meat crust: In a bowl, combine ground beef, egg, Parmesan or pork rind crumbs (if using), and salt. Mix just until uniform.
- Form the base: Press the meat mixture onto the parchment into a 10–11 inch (25–28 cm) round about 1/4 inch (6 mm) thick with a slightly thicker rim.
- Par-bake: Bake 10–12 minutes until the crust is browned at the edges and mostly set. Carefully drain off or blot excess fat. For an extra-firm base, flip the crust and bake 2–3 more minutes.
- Add toppings: Sprinkle half the mozzarella over the crust, then add pepperoni and bacon. Top with remaining mozzarella and the finishing Parmesan.
- Finish baking: Return to the oven for 5–7 minutes until cheese is fully melted and bubbling. Broil 1–2 minutes if you want extra browning.
- Rest and serve: Let the pizza rest 5–10 minutes to set, then slice and serve.
