Carnivore Breakfast Burrito Bowl - For the Carnivore Diet
This bowl captures classic burrito flavors using only animal-based ingredients. Savory ground beef, soft-scrambled eggs, crispy bacon, melted cheddar, and a layer of crunchy pork rinds come together fast for a hearty carnivore breakfast.
Use 80/20 ground beef for a juicy base and cook it right in the bacon fat for maximum flavor. Keep seasonings simple with just salt; the bacon and cheese add plenty of savoriness on their own. If you prefer, swap the beef for ground pork or leftover steak—just stick to meat and salt with no fillers.
Soft-scramble the eggs in tallow or butter until just set, then assemble while everything is hot so the cheese melts gently. Pork rinds add the crunch you’d expect from a burrito bowl without any plants. A dollop of full-fat sour cream makes it extra rich.
For meal prep, cook the bacon and beef ahead, then reheat gently and scramble fresh eggs in minutes. Store cooked components separately in the fridge for up to 3 days and assemble right before eating.
Ingredients
- 8 oz (225 g) 80/20 ground beef
- 4 slices bacon
- 4 large eggs
- 1/2 cup (2 oz/56 g) shredded cheddar cheese
- 1/4 cup (60 ml) full-fat sour cream
- 1 oz (28 g) pork rinds, lightly crushed
- 1 tbsp beef tallow or butter
- 1/2 tsp kosher salt, or to taste
Instructions
- Crisp the bacon: Place bacon in a cold skillet, set over medium heat, and cook until crisp, 6–8 minutes. Transfer to a plate and roughly chop. Leave 1–2 tablespoons of bacon fat in the skillet.
- Brown the beef: Add ground beef to the hot skillet with the bacon fat. Season with a pinch of salt and cook, breaking it up, until browned and no longer pink, 4–5 minutes. Reduce heat to low to keep warm.
- Scramble the eggs: In a bowl, whisk eggs with a small pinch of salt. In a separate nonstick skillet, melt the tallow or butter over medium-low heat. Pour in the eggs and gently stir until soft and just set, 1–2 minutes.
- Assemble: Divide the beef between two bowls. Top with the soft-scrambled eggs and the chopped bacon. Sprinkle the shredded cheddar over the hot ingredients so it begins to melt.
- Finish and serve: Add a dollop of sour cream to each bowl and scatter the crushed pork rinds on top for crunch. Taste and add more salt if needed. Serve immediately.
